History of Scotch Broth

Scotch Broth has deep roots in Scottish culinary history, dating back to medieval times. Originally, it was a simple peasant dish made with whatever ingredients were available, often including barley, vegetables, and scraps of meat. Over time, the recipe evolved to incorporate richer flavors and more substantial cuts of meat, becoming a beloved dish enjoyed by families across Scotland.

Ingredients

500g stewing beef, cut into cubes

2 tablespoons vegetable oil

2 onions, chopped

2 carrots, diced

2 celery stalks, sliced

2 potatoes, peeled and diced

100g pearl barley

1 leek, sliced

2 bay leaves

1 sprig of thyme

Salt and pepper, to taste

2 liters beef or vegetable broth

Chopped parsley, for garnish

Instructions

Prepare the Beef: In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set it aside.

Sauté Vegetables: In the same pot, add the chopped onions, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.

Combine Ingredients: Return the browned beef to the pot. Add the diced potatoes, pearl barley, sliced leek, bay leaves, and thyme sprig. Season with salt and pepper.

Simmer the Stew: Pour in the beef or vegetable broth, ensuring that all ingredients are submerged. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the barley is cooked.

Adjust Seasoning: Taste the stew and adjust the seasoning with salt and pepper, if needed.

Serve: Ladle the Scotch Broth into bowls. Garnish with chopped parsley before serving.
